Texas Toast Sloppy Joes (High-Protein)
Crispy, buttery Texas toast piled high with saucy beef and melty cheese—amped up with extra protein.
Ingredients (Serves 4)
Sloppy Joe Filling

680 g (1.5 lb) lean ground beef (90–93%)

1 small onion, finely diced

1 small green bell pepper, finely diced

3 cloves garlic, minced

¾ cup no-sugar ketchup

1 tbsp mustard
-
1 tbsp Worcestershire sauce

1 tsp paprika
-
1 tsp salt
-
½ tsp black pepper
-
½ cup plain non-fat Greek yogurt
Toast & Topping

8 slices Texas toast
-
1 cup shredded cheddar or mozzarella

2 tbsp butter, melted
-
1 tsp garlic powder
-
1 tsp dried parsley
Instructions

Cook beef
In a skillet over medium-high, brown ground beef with onion and bell pepper 6–8 minutes. Add garlic last 30 seconds. -
Make it saucy
Stir in ketchup, mustard, Worcestershire, paprika, salt, and pepper. Simmer 3–4 minutes. Remove from heat and mix in Greek yogurt. -
Prep toast
Mix melted butter with garlic powder and parsley. Brush on one side of Texas toast slices. Place on a baking tray, buttered side down. -
Assemble
Spoon sloppy joe mixture onto each slice. Top with shredded cheese. -
Bake
Bake at 200°C (400°F) for 8–10 minutes until bread is crisp and cheese melted. -
Serve hot and crispy.
