Whoever came up with this—BRILLIANT! The perfect crunchy, high-protein, low-carb bite!
Slice mini bell peppers into rings, toss in a ziplock bag with a drizzle of olive oil, a sprinkle of taco seasoning, shredded cheddar, and a pinch of salt. Add in a spoonful of cooked ground turkey or chicken for an extra protein punch. Shake it up and air fry at 400°F for 8–10 mins until melty, crisp, and golden.
Top with a dollop of Greek yogurt, a little guac, and fresh salsa if you like.
Cheesy, spicy, and totally bariatric-friendly — like nachos, but lighter and even better!
