📝 Ingredients

  • 2 medium russet potatoes (6–7 oz / 170–200 g each)

  • 1 tbsp olive oil

  • ¼ cup Greek yogurt

  • 2 tbsp shredded cheddar cheese

  • 1–2 tbsp chopped green onions or chives

1) Prepare the potatoes

  1. Preheat oven to 425°F (220°C).

  2. Wash and dry potatoes thoroughly. Poke several holes with a fork.

  3. Rub olive oil over the skins, then sprinkle with salt, pepper, and garlic powder.

2) Bake

  1. Place potatoes directly on a baking sheet or oven rack.

4) Assemble
