Ingredients:
2 large eggs
1½ cups grated zucchini (about 2 medium zucchinis)
¼ cup olive oil or melted coconut oil
½ cup plain Greek yogurt
½ cup honey or maple syrup
1 teaspoon vanilla extract
1½ cups whole wheat flour or white whole wheat flour
½ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg (optional)
½ cup chopped walnuts or dark chocolate chips (optional)
Instructions:
Preheat the Oven:
Set your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper for easy removal.
